Ingredients

12–14 peppers
200 g minced meat or plant-based mince
1 dl rice
1 dl tomato paste
1 dl water
½ dl soy sauce
1 tsp dried rosemary
1 tsp hot paprika powder
1 tsp cayenne pepper
1 tsp dried oregano
3 tsp salt

WoW! Cheesy Sauce

1 dl WoW! Plant-based shredded mozzarella or cheddar alternative
1 dl water
1 tbsp olive oil
1 tsp salt

Instructions

1. Prepare the peppers
Wash the peppers and carefully remove the tops and seeds. Set aside.

2. Cook the rice
Prepare the rice according to the package instructions, then set aside.

3. Make the filling
In a large bowl, combine the minced meat, cooked rice, tomato paste, water, soy sauce, dried rosemary, hot paprika powder, cayenne pepper, oregano, and salt. Mix well until everything is evenly combined.

4. Stuff the peppers
Fill each prepared pepper with the meat/veg mince and rice mixture. Do not overfill them, as the filling may expand during cooking.

5. Cook the stuffed peppers
Place the stuffed peppers upright in a large pot or deep pan. Cook on the stove over medium heat until the peppers are tender and the filling is fully cooked.

6. Make the cheesy sauce
Add the WoW! Plant-based shredded mozzarella or cheddar alternative, water, olive oil, and salt to a small saucepan. Heat over medium heat, stirring continuously, until the mixture is melted and begins to bubble.

7. Let it cool slightly
Remove the sauce from the heat and cool it for about 2 minutes.

8. Add the cheesy sauce
Once the stuffed peppers are cooked, transfer them to an oven-safe dish and pour the cheesy sauce evenly over the top.

9. Bake
Place the dish in the oven and bake until the cheesy sauce is golden brown on top.

10. Serve
Allow the peppers to cool slightly before serving.
