1 pie crust or puff pastry
300 g silken tofu
100 g spinach
40 g sundried tomatoes
2 garlic cloves minced
1 yellow onion chopped
1 tbsp miso or tamari
175 g WoW! plantebaseret shredded cheddar alternative OR shredded mozzarella alternative
3–4 tbsp nutritional yeast
3 tbsp tapioca flour
2 tbsp olive oil
1 heirloom tomato sliced
Salt & pepper
Rocket salad to serve (optional)
SPINACH TOMATO CHEDDAR QUICHE

1. Preheat oven to 180°C.
2. Sauté garlic and onion in olive oil, add spinach, cook until wilted.
3. Blend tofu, nutritional yeast, tapioca, miso or tamari, salt, and pepper in a high speed blender until smooth.
4. Mix in spinach, sun-dried tomatoes , and WoW! plantebaseret shredded cheddar alternative.
5. Shape your pie crust in a 20 cm round tin.
6. Pour the mixture into crust and smooth top.
7. Brush crust with oil for extra crispness or add sliced heirloom tomatoes and extra shredded cheddar alternative.
8. Bake 40-50 minutes or until set and lightly golden.
9. Cool 20-30 minutes before slicing. Serve as it is or with rocket salad.
