CHEESY GREEN CHILI BEANS

Crispy pinto beans, our plant-based mozzarella alternative, and fresh cilantro salsa verde come together in this quick, spicy, and irresistibly cheesy dish.

Ingredients

  • 1 tbsp olive oil
  • 2 tbsp chopped Jalapeños
  • Salt and pepper
  • 1 can pinto beans, rinsed
  • 1 batch cilantro salsa verde (see below)
  • 150g WoW! plantebaseret shredded mozzarella alternative
  • Lemon wedges and fresh cilantro, for serving

     Cilantro Salsa Verde

  • 2 dl fresh cilantro chopped
  • 2 green chili beans chopped
  • 2 minced garlic cloves
  • 1 shallot finely chopped
  • 4 tbsp capers chopped
  • 3 tbsp lemon juice
  • 1 dl olive oil
  • Salt and black pepper

Instructions

1. Start by making salsa verde. Mix all ingredients and set aside.
2. In a large, ovenproof skillet, heat the oil over medium-high. Add the jalapenos, cook, until browned.
3. Stir in pinto beans, salsa verde, simmer until thickened slightly, 2 to 3 minutes.
4. Add a splash of olive oil and water. Stir together.

Alternative serving suggestion: turn off the heat and sprinkle the shredded mozzarella alternative evenly over the top. Drizzle with a little olive oil and a splash of water, then broil at 200°C for 2–3 minutes, or until melted and lightly browned.
5. Serve right away topped with cilantro leaves, capers and lemon wedges.

Serving recommendation:
Serve with rice or bread for a complete meal.

Chef`s tip:
When you are using our mozzarella alternative in sauces, always melt it with a generous splash of olive oil and water.
